New Guests are invited to each meeting, but will pay an extra non-ICES member fee when registering.  Meetings usually consist of a luncheon, general meeting, and demonstrations of various aspects of sugar arts.  Each meeting fee includes the cost of the luncheon and demos.  Advance registration and payment are required.


Local Meetings are called
“Days of Sharing” (DOS).

They are typically held the last Sunday in the months of September,  January, March, and June, and take place in different regions of the state.

Typically we offer classes  during those same weekends on Saturday and Sunday which are conducted by our guest  instructors.

Hands on Classes with
Erin Gardner

Erin Gardner began her career in sweets as a
pastry chef in numerous New England kitchens,
most notably at Boston’s legendary Locke Ober.

After a sugar flower class in NYC, she struck out
on her own and opened Wild Orchid Baking Co. Finding her passion in sugar flowers, Erin finally felt at home baking, designing, and decorating cakes. After opening her shop, Erin competed and won on Food Network’s Sweet Genius, and received nods from both Martha Stewart Weddings and Brides Magazine as one of the top wedding cake pros in the country. Brides also included a cake of Erin’s as one of America’s Prettiest Wedding Cakes.

With baby #2 on the way and increased writing and teaching demands, Erin decided to move on from Wild Orchid Baking Co. and launch her blog, ErinBakes.com. There, she shares fun and accessible recipes and techniques that combine her fine pastry skills and modern cake designs. In her second book, Erin Bakes Cake, she shares her versatile and delicious cake, filling, and frosting recipes along with innovative decorating techniques using candy, cookies, and chocolate! Beyond her own blog, Erin is also a regular contributor for The Cake Blog, Craftsy’s Cake Decorating Blog, Darby Smart, and American Cake Decorating Magazine.

When not playing with cake, you’ll find Erin enjoying the gorgeous New Hampshire lakes region and seacoast with her husband and kids. Learn how to work with both tempered chocolate and coating chocolate to create a marbled chocolate wrap; make a wired orchid structure that can be applied to different kinds of flowers; sculpt chocolate orchids, leaves, and buds. You will go home with your chocolate, paint brush, extra wires, floral tape, acetate sheet for wrapping, and the finished dummy cake.

Create your own gorgeous chocolate garden to include…Erin’s signature chocolate peony, tulips (smooth and French), daffodils, daisies, filler leaves. You will go home with your chocolate, paint brush, paring knife, foil forms, and finished dummy cake.

Learn how to make stunning, but easy to execute statement flower on top of a finished dummy cake. You will go home with your chocolate, paper templates, and finished dummy cake.

Class 4: Chocolate Marbling and Cake Garnishes (1 Hour)
Sunday June 24 2018    10:30am—11:30am

In this class we’ll explore… Easy techniques for creating marbled chocolate plaques, how to mold chocolate into spheres and other shapes, making shaped chocolate spirals. You will go home with your chocolate, scribe tool, small tray, and finished dummy cake.

NOTE: CLASS FEES ARE NON-REFUNDABLE. Advance registration is mandatory for all events! Your registration may be reassigned to another person with approval from the MassICES Rep 24 hours prior to the start of class, and any applicable fees paid (i.e. Difference between member and non-member price where it applies.) Classes may be cancelled in the event that the minimum number of students are not met to hold the class. You will receive an e-mail confirmation for class registrations only. Should you have any questions regarding your registration for the classes please contact us at massicesrep@gmail.com.
Any checks returned for any reason from the bank will incur a $25 processing fee payable to MassICES. 

Anyone who cancels their payment directly through their credit card company after the event because they did not attend, or had an issue with the class(es), will be subject to fraud and will be asked not to attend classes or a DOS in the future.
